When I add a session, how do I know how much memory limit I should set ?

A very good thing to do is to render a test frame on your own machine before sending a full animation to the farm - using top (Linux) or Task Manager's "Peak Working Set (Memory)" will give you the amount of memory required for the scene. If you set it too low your session will be cancelled by the system (most likely an admin will catch it and change the value). If you set it too high then fewer machines will be able to help you.
